Growing up on the farm, Roslyn developed a strong interest in nature and farming, influenced by the beautiful landscapes around her, but pursued a degree in Civil Engineering and spent 7 years working in the engineering profession. In 2006, after receiving a work visa for Canada, she made the decision to resign from her engineering job and explore new opportunities. During the following year, she worked on 12 organic farms in Alberta and British Columbia, Western Canada, where she learned basic principles of organic horticulture and developed a strong respect for the environment and the hard work of farmers.

After her time in Canada, Roslyn returned to the family dairy farm and helped her Dad do the daily milking. She also helped with some tractor work, and paperwork, whilst also growing organic vegetables for the family and rearing outdoor Saddleback pigs. Amid her farm duties Roslyn made time to do some painting and photography, but that’s a story for another day!

In 2014, she achieved distinction in a Foundation Degree (FdSc) in Organic Horticulture through CAFRE (College of Agriculture, Food & Rural Enterprise). She subsequently spent five years volunteering in rural Uganda, where she taught both farmers and school children the skills needed to cultivate food crops effectively and profitably. Her efforts culminated in her becoming an accredited ‘Farming God’s Way’ trainer in Uganda in 2019.

Since returning to the family farm in Northern Ireland in 2020, Roslyn has focused on producing healthy beef for direct sale locally while enhancing the environment and increasing biodiversity on the farm. By implementing regenerative agricultural practices, such as Adaptive Multi-Paddock (AMP) grazing, she aims to improve the quality of the livestock while also promoting soil health.
